Dry Aged beef is one of the ultimate steak experiences. The process enhances the tenderness and flavor of your steak while concentrating a more beef-forward finish. The texture alone simply melts in your mouth. Joseph’s Dry Aged Steaks are hung in our large walk-in cooler under controlled air flow temperature between 21 to 28 days. The secret to our dry aging is consistency. Key ingredients are our air flow to help form the aging process, humidity control to keep the natural juices intact, and the all important temperature control to keep your steak fresh. The restaurant is next to the Eleanor Roosevelt National Historic Site (Val-Kill). We're just 5 minutes from the Home of Franklin D. Roosevelt (FDR), Marist College, and The Culinary Institute of America (CIA). We're 15 minutes from from Vassar College in Poughkeepsie and 30 minutes from Bard College in Annandale-on-Hudson.
We are also less than 10 minutes north from the Walkway Over the Hudson State Historic Park Poughkeepsie entrance.
